Citrus bergamia, the bergamot orange is a fragrant citrus fruit the size of an orange, with a yellow or green color similar to a lime depending on ripeness. The fruit is believed to be a hybrid of a lemon and bitter orange. The flavor is amazingly fresh and for the pearls, I again combine the bergamot juice with saké which gives a well-balanced drink. I recommend serving the pearls cold even with the warm dishes as it develops the flavor perfectly.
